By Nick Zelaya Liverpool, N.Y. (NCC News) – Heid’s of Liverpool has been serving hot dogs for over 100 years now, and have slowly expanded their menu, adding Philly cheese steak sandwiches, grilled cheese, and chicken tenders. But the Coronavirus pandemic caused a challenge that had never been seen before. The health guidelines forced the restaurant to make many adjustments. such as closing indoor seating and making it take-out only, letting go of many employees, and even having shortages of supplies.
“We were constantly ordering things and we’d be out of it for three, four weeks and then be lucky if we ever got it back,” manager of Heid’s, Jessica Lamariana said.
She added how some of the employees, who were in their 50s and 60s, they lost were “really good,” but understood the precautions. Over time, the restaurant lost so many workers that they would go some shifts without the required five employees need to properly run the kitchen. And that does not include serving and cleaning. Heid’s evolved a takeout method which became crucial to keeping the local spot in business throughout the pandemic, and this curbside pickup was an advantage not just for the customers, but the staff members too.
“When that [curbside pickup] kind of came in we really started booming,” Xavier Sanchez, the restaurant’s grill master said. “And it just kind of came up to finding a good pace between how many people we need on compared to how many people are needed to keep the place going.”
The restaurant continues to focus on curbside pickup, along with keeping indoor and outdoor seating. Sanchez added how they are looking to utilize other forms of currency to make transactions easier and safer between the customer and the worker. That’s just one of the many additions Heid’s plans to implement to keep business from disappearing.
