I have friends of mine that are physicians and doctors, and they’ve always wanted to be in a restaurant. And now I said okay, now you can be in a restaurant, you can open up for a week, lose all your money for one week, and be out of it, and get out of it.”

COOK: “It isn’t often that you can find a public venue where you can really relax, reflect, and do things your way, but at this Baldwinsville venue that’s the entire idea and business model; it’s got D-I-Y in the name. You do it yourself.”

SICK: “I’ve kept it simple, that was because of the labor shortage. We provide the tables and chairs and linens if they want. After that they can hire the food truck or caterer or neighborhood or family party where everyone is bringing a plate, and that keeps it real simple and they do that, we don’t.”
