By Jasmine Lee SYRACUSE, N.Y. (NCC News) — Eating habits and food consumption trends change with many factors. In 2021, there has been a national increase in consumption and production of dairy products.
The typical American consumes about two cups of dairy each day and is recommended to consume three cups, according to the USDA. Professor of nutrition and food studies at Syracuse University Chaya Charles said the increase in dairy consumption might be linked to many different factors and the trend is positive to human health.
“It might be related to cooking at home or you have to think a lot of what in the U.S. are considered comfort foods are butter, cheese, and dairy based,” Charles said.
North America accounted for 34 percent of the global level of consumption and production of dairy products, according to Reports and Data. There also has been a substantial growth in consumption of different dairy products such as yogurt, almond milk, soy milk, cheese and butter. This trend is also seen in the local community in Syracuse, such as Heritage Cafe, which uses at least three to four gallons of milk everyday.
“We have seen a lot of increased consumption not just in real dairy products such as skim and whole milk, but we’ve also seen it with almond milk and soy milk,” owner of Heritage Cafe Michele Rochkind said.
And with the impact of the pandemic in the economy, farmers and businesses also faced difficulties selling products. Charles said this created new partnerships in the community.
“Especially in rural areas where farmers were having difficulty getting their products out, but then businesses and organizations and community organizations were having very difficult time getting products in. It did create some good new bridges for local food,” Charles said.
And with the growth of dairy consumption in a very big market like the U.S., the international dairy packaging market is also predicted to see a 6.6% growth of $70.30 billion in 2020 to $103.66 billion in 2028. And among many dairy products, yogurt is expected to be growing the fastest due to demand and health benefits.
