JOHNSON: “Like you’re out of olive oil. That’s like being out of water, especially in a kitchen, you know.”

REPORTER: Gregory Johnson, the purchasing manager at downtown Restaurant, Pastabilities, had more to say about the struggles in keeping consistent quality.

JOHNSON: “Well, what’s affecting me and us right now is the fresh stuff that we make on a day to day basis. You want to have consistency, and when the prices change, that makes it a little bit more stressful.”

REPORTER: Pastabilities has found some relief from these struggles due to their loyal customers.

JOHNSON: “We’re lucky here because we are so popular and we have such a good fan base that helps this particular restaurant weather some of these changes.”

Syracuse, N.Y. (NCC News) — The olive oil shortage, caused by heat waves and wildfires in Europe over the summer, has hit many restaurants in the Syracuse area, including fan favorite Pastabilities

“You’re out of olive oil?” said Pastabilities purchasing manager Gregory Johnson, “That’s like being out of water, especially in a kitchen.”

Johnson spoke more about the struggles the restaurant has been facing with keeping their well-known quality consistent, including having troubles with cooking their fresh foods and sauces.

“Well, what’s affecting me and us right now is the fresh stuff that we make on a day to day basis. You want to have consistency, and when the prices change, that makes it a little bit more stressful,” said Johnson.

However, Pastabilities has found some relief from this shortage due to their popularity among the people of Syracuse, letting them be more secure in the short term.

“We’re lucky here [at Pastabilities] because we are so popular and we have such a good fan base that helps this particular restaurant weather some of these changes” said Johnson.
